Setting the Java version for your Minecraft Java Server is quite simple.

Step 1: Go to Startup settings

Open the Startup settings via the game panel.

Step 2: Change the Docker image

At the top right under Docker Image, change the current Java version to the one you need.

Step 3: Start or restart your server
